Acqualagna's white truffles

Acqualagna is a village near Urbino with a population of about 4.000 and is ranked as the second most important truffle-producing centres in Italy. About two-thirds of the country's truffles are found here and the National Truffle Fairs exhibits the fragrant bounty corresponding to the respective harvest period of the different products varieties. Germany especially values the product and is its largest consumer in Europe, but the truffles are also very popular in the USA and Canada as well. These pricey little nuggets, cloaked in earthen sheath, can be eaten shaven on pasta dishes, especially home-made tagliatelle, or in lots of unique local products that incorporate this delicacy, such as truffle honey to accompany pecorino cheese, truffle butter to crown a delicious risotto, or even truffle chocolate candies infused with white truffle.
