Italy's chefs have long made a name for themselves throughout the world and chefs from le Marche are among the best. The town of Senigallia in particular has a reputation as the region's culinary centre, boasting two of the top 20 restaurants in Italy. The most famous, La Madonnina del Pescatore is run and owned by the Michelin two-star chef Moreno Cedroni  who also owns one of the most enchanting beach clubs at Portonovo near Ancona - Il Clandestino Sushi Bar.  In 2004 Cedroni set up Officina –an atelier of sorts where his staff produces delicious fish sauces for pasta, special fruit jams and wine jellies expressly created to be paired with cheeses. In just a short time after opening Officina's reputation has spread throughout Europe and Japan and  Cedroni's “jams-to-be-tasted-with-cheese”, a treat we serve before main courses in Italy, are now being introduced to American gourmets by Alta Cucina.
Matteo Cedroni has a glittering reputation, but catching up fast is the fantastic Mauro Uliassi, whose restaurant is set right on the beach in the centre of town. His family has been in the restaurant and bar business for four generations. He has participated in specialization courses with great European chefs and in 1990 he opened “Uliassi” near the city harbour making a name for himself as a chef who has strong ties to the  local culinary tradition. In 2000 Mauro Uliassi was awarded the prize Chef of the Year, he has recently been awarded his second Michelin star for his restaurant in Senigallia, and he is also recipient of the prestigious “Three Forks” award from Italian Restaurant guide Gambero Rosso .
In 2008 both Mauro Uliassi and Moreno Cedroni won the prestigious  Swedish Kungsfenan Seafood Award  in Goteborg in the category Maritime Gastronomy. Have you reserved a table yet?
